Chocolate Snack Cake
Snack cakes are simple and satisfying. Made in one bowl, perfect for a little pick-me-up or to make with kids for a fun treat - best of all, it can be made in less than 10 minutes. I’m putting chocolate ganache as my topping, but a quick dusting of confectioners’ sugar works, too! Pack this in a lunchbox to make someone’s afternoon a little sweeter!
Ingredients
For the cake:
2 large eggs
½ cup sour cream
4 ounces coffee
4 ounces vegetable oil
1 teaspoon vanilla extract
1 cup light brown sugar
1 cup all purpose flour
⅓ cup unsweetened cocoa powder
½ teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
For the Frosting:
8 ounces chocolate
8 ounces sour cream
1 tablespoon coffee or vanilla extract
½ teaspoon salt
Preparation
Butter and flour an 8 X 8-inch baking pan or spray with baking spray
In a medium bowl, whisk together the eggs and sour cream; add the coffee, vegetable oil, and vanilla extract and whisk to combine. Whisk in the light brown sugar, breaking up any lumps. Add the flour, cocoa powder, baking powder, baking soda, and salt; whisk until just combined and no lumps of flour remain. Pour into prepared pan and bake for about 20 minutes, or until a toothpick inserted comes out clean or the cake springs back when lightly touched in the center.
Using a heatproof bowl, melt chocolate over a double boiler, allow to cool slightly, and whisk in sour cream, coffee, and salt until thickened and spreadable.
Using the back of a spoon or a small offset spatula, spread the icing on top of the cake, making swirls, dips, and dollops as desired.
