Vegan Cashew Cheesecake

From my 2015 book, Making Artisan Cheesecake. Rich, creamy, and no-bake. The only advance preparation is soaking the cashews overnight. This recipe is using a springform pan, but you can also make these in individual glasses to set up faster.
