Sweet and sour lil gummies!

Ingredients

500g Fruit Puree

50g. Water

60g. Sugar

13g. Pectin

500g. Sugar

100g. Glucose or Corn Syrup

Preparation

Combine puree and water in a pot and bring to a simmer. Add in your apple pectin and first measure of sugar and bring to a boil. Add glucose and second measure of sugar and cook until 225 degrees! Easy Peasy!

Ah yes, February. Time to bust out all your romantic gestures and signs of your affections - and nothing says “I love you” more than some homemade confections to present to your love, whether they are romantic, platonic, familial or imaginary. In this stream we’ll make some intimidating candy look easy: I’m talkin’ pate de fruit, truffles and caramels. All you’ll need is a candy thermometer and a whole lot of sugar (just kidding, we’ll use some other ingredients too).
