4 quarts Vegetable or Corn Oil
1 medium Onion, Peeled and halved
2 sprig Fresh Rosemary
4 clove Garlic, Peeled
4 sprig Fresh Thyme
2 tbsps Kosher Salt
4 pounds Bone-In, Skin-On Dark Turkey Meat
1. Preheat the oven to 250ºF.
2. In a deep hotel pan or pot, combine all the ingredients, making sure the turkey is fully covered in the oil. Transfer to the oven and roast for 5 hours.
3. Allow everything to cool at room temperature, then remove the turkey from the oil bath, shred the meat, and serve. You can also store the covered pan in the refrigerator overnight before shredding and serving.
