Instant Pot Confit Chicken Wings

Ingredients

For the wings: 

2 quarts vegetable oil

1 pound chicken wings

2 tablespoons salt


For the spice rub: 

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon chili powder

1 teaspoon black pepper

½ teaspoon mustard powder

1 teaspoon cayenne pepper

1 tablespoon salt

Preparation

1. Set your Instant Pot to low heat or manually heat to 250ºF. Add the oil to the Instant Pot.

2. Evenly coat the wings with the salt, then transfer to the oil bath. Cook for 2 hours.

3. Remove the wings from the oil bath and carefully pat dry with paper towels. Set the wings aside uncovered at room temperature to dry out.

4. In a large bowl, mix together the rub ingredients to thoroughly combine.

5. Coat the wings evenly in the spice rub, then transfer to an air fryer. Cook on high until golden brown, 3-5 minutes depending on the size of the wings. Enjoy!
