Homemade Toaster Pastries with Strawberry Jelly

Total Time: 1 hour and 15 minutes, plus 4 hours of setting time for the jelly

Servings: 6-8

Ingredients

For the strawberry jelly: 

1 pound fresh strawberries, hulled and halved

½ cup sugar

1 tablespoon lemon juice

2 tablespoons cornstarch (or pectin)


For the pastries:

2 cups all-purpose flour

1 tablespoon sugar

1 tablespoon salt

2 tablespoons milk

1 medium egg

2 sticks unsalted butter, sliced (1 cup)


For the glaze: 

1 cup confectioners’ sugar

2 tablespoons milk


For finishing the pastries: 

1 medium egg, beaten

Preparation

1. At least 4 hours ahead of time, make the strawberry jelly: In your Instant Pot, combine the strawberries, sugar, and lemon juice. Let everything sit for 10 minutes to let the strawberries release some moisture.

2. Turn your Instant Pot on high pressure and cook the strawberry mixture for 15 minutes.

3. Let the Instant Pot sit for 10 minutes to naturally allow steam to release, then manually open the Instant Pot to release the rest of the steam.

4. In a small bowl, mix together the cornstarch and water. Add the cornstarch mixture to the Instant Pot and turn the pot to the sauté setting. Bring to a boil and cook until thickened, 2-3 minutes. Allow the jelly to cool to room temperature, then transfer to the refrigerator to chill until set, at least 4 hours.

5. To make the dough, in a large bowl, combine the flour, sugar, salt, and milk. Add the egg and slowly blend the mixture into a dough. Add the butter and knead until the butter is broken down and thoroughly blended well into the dough.

6. Divide the dough into 2 equal parts, then knead into a flat disk. Wrap each disk separately in plastic wrap and transfer to the refrigerator to chill for 20 minutes.

7. Once chilled, remove the dough from the refrigerator and roll it out to about ¼-inch thickness. Slice into 12-16 toaster pastry–sized rectangles (you’ll need 2 per finished pastry), repeating the kneading and rolling process with the dough scraps as necessary.

8. To make the glaze, in a separate large bowl, mix together the confectioners’ sugar and milk to combine. Set aside at room temperature until ready to use.

9. To assemble, place a dollop of the strawberry jam in the center of 1 pastry rectangle. Brush the edges with egg wash, then top with another rectangle. Using a fork, crimp and seal the edges. Brush the top of the pastry with egg wash and poke a few small holes in the center. Repeat with the remaining pastry squares.


10. Arrange the assembled toaster pastries in the Air Fryer. Set the Air Fryer to 375ºF and 8 minutes. Cook the pastries, rotating the trays when told. Set aside to cool slightly, then drizzle with the glaze and serve.
