Spinach and Ricotta Polpette in Tomato Sauce

Similar to a gnudi, these delicate ricotta dumplings simmered in a spicy tomato sauce are a fresh and light alternative to a filled pasta.

I used a fresh sauce in this recipe but you can easily use a jarred sauce to speed up the cook time.

This recipe comes together quickly, and with so little effort. Using a food processor makes quick work of the ricotta mixture, and you can customize it with different vegetables and herbs if you wish.

We serve ours as is with some crusty bread, but they can easily pair with spaghetti or your favourite pasta.
