Pasta alla Norma

Pasta alla Norma is a classic southern Italian and Sicilian pasta dish for a reason. This pasta dish features crispy fried eggplant and tons of gooey cheese, in a bright and fresh tomato sauce. If you love pasta and eggplant parmigiana, this recipe inspired by my Nonna’s classic dish is perfect for you. Typically, my Nonna makes this dish with gnocchi, throws everything into a casserole dish, covers everything in a mountain of mozzarella and bakes in the oven. It’s one of my favourite meals of all time but believe me when I say you’ll need a nap afterwards.

My version is lighter, fresher, and can be made any night of the week. I like to make mine with orecchiette, but any short pasta works really well. Avoid using a long pasta like spaghetti for this.

This dish is best in the summer when tomatoes are perfectly in season.

Served family style with fresh crusty Italian bread…it’s just perfect.
