vegetable & black bean sheet pan quesadilla

Making quesadillas for a crowd isn’t exactly my idea of fun.  Instead of standing over the stove making one or two at a time, I’d rather make one really big quesadilla (and I mean REALLY big!) and have everyone (me included!) eating at the same time.  That is what inspired my Vegetable & Black Bean Sheet Pan Quesadilla!

I first saw this idea on Instagram and thought it was a very clever one.  The thought of lining a half sheet pan with flour tortillas, then topping them with cheese, a filling, more cheese, and then folding the tortillas onto themselves and baking it sounded like a perfect easy recipe for game night.  Since Ryan and I have moved back home, I often have more mouths to feed, including teenagers!  It turns out teenagers eat everything in sight, and then some!  

Packed with fresh vegetables, black beans, fresh parsley, and cheese, the filling comes together in under 20 minutes.  It is also forgiving and interchangeable.  Are yellow peppers on sale at the grocery store?  Then use those.  Don’t have a red onion on hand but have a yellow onion instead?  Perfect!  Just make sure you don’t add anything watery like tomatoes as it will make the quesadilla soggy.  I have yet to find a soggy quesadilla delicious.
