Every summer, I love to create a signature berry recipe that uses the ingredients that I associate with farmstands— usually raspberries, blueberries and strawberries. For this season, I wanted to make an oven pancake that is not only absolutely delicious, but also makes quick work of breakfast (all in one pan!) while turning the chic factor way, way up. Who doesn’t love that?

My Triple Berry Oven Pancake with Framboise Butter sings with fruit flavor— the trio of berries is accented with a touch a citrus from lemon zest and lemon juice. I also love being able to see the berries in every single bite of the fluffy pancake! The drizzle of Framboise Butter is the perfect touch of luxe that makes this dish truly special, but it is easy enough for any lazy weekend morning.

Even though this pancake features my favorite summer-fresh berries, it can also be made with thawed frozen berries, or with bananas, all year long. If you are a ‘breakfast for dinner’ person, try this with a wheel of brie, champagne, and casual wildflowers for something a little different at home at dinnertime.
