Mushroom Salad

Ingredients

Mushroom Salad:

1/3lb maitake mushrooms

1/3lb oyster mushrooms

1/3lb king oyster mushroom

3 cloves garlic bruised

1 lemongrass bruised

1 knob galangal bruised

2-3 lime leaves

3 tbs neutral oil

1tbs fish sauce

2-3 tbs coconut milk

Dressing:

2oz chili jam

1.5 oz coconut cream

¾ oz palm sugar

¾ oz tamarindo paste

¾ oz lime juice

½ tsp chili flakes

½ oz fish sauce

Salt t.t.

Whisk everything together

Preparation

Heat a wok until hot then add in oil. Add aromatics and stir-fry for 1-2 minutes. Add in mushrooms and then stir-fry for 2-3 minutes. Add in your coconut milk and fish sauce and cook until mushrooms are tender and charred. Remove from heat and discard the aromatics.

Putting the salad together

Cooked mushrooms

2-3 lime leaves julienne

1 lemongrass sliced thin

10-12 mint leaves torn in half

10-15 cilantro leaves torn in half

3tbs crispy shallots

2 tbs sliced crispy garlic
