Spicy Pickled Watermelon Rind
Watermelon is a must in the summer- put the rinds to good use by pickling them! Serve on charcuterie boards, with your grilled favorites, tacos, or snacking!
Ingredients
The rind of ½ a watermelon, cubed*
1 sliced jalapeno (remove seeds if you want it less spicy)
1 ½ c of apple cider vinegar
½ c water
¼ c sugar
2 tsp coarse sea salt
**I removed the green outer layer for better texture, but the green layer is perfectly edible if you’d like to keep it.
Preparation
1. In a 32oz mason jar or jar, fill the jar up with watermelon rind cubes. Pack in the sliced jalapenos. The mixture will shrink as it sits in the pickling liquid so really try to pack it in.
2. In a small saucepan over medium heat, add sugar, salt, vinegar, and water. Bring to a simmer stirring to dissolve the sugar and salt.
3. Remove from heat and pour the hot pickling liquid over the watermelon rind. Allow the jar to cool at room temp before storing it in the fridge for up to 2 weeks. Serve with your grilled favorites, add it to a charcuterie platter, serve with tacos or nachos, or enjoy it straight out of the jar!
