Eggplant Burrata Bruschetta
Quite possibly the easiest bruschetta you’ll ever make that comes together in less than 10 minutes!
DO NOT, I repeat, DO NOT overlook the Trader Joe’s canned Grecian style eggplant.
Ingredients
1 Baguette sliced in half lengthwise (alternatively, can slice into crostinis and top individually)
Olive oil
1 can of Trader Joe's Grecian Style Eggplant
1 garlic clove, peeled
1 pkg of burrata cheese (or 2 burrata balls) quartered
2-3 basil leaves, torn
Salt and pepper
Preparation
Turn the oven broiler to high.
Place the baguette on a baking sheet.
Drizzle the baguette with olive oil.
Broil the baguette under the broiler until golden brown- keep an eye on it so it doesn’t burn!
1. Remove the baguette from the pan and rub the surface of the bread with the garlic clove.
2. Spread the top of the toasted bread with the eggplant, tomato, and onion mixture.
3. Top with burrata cheese covering the surface area the best you can.
4. Drizzle with more olive oil and season with salt and pepper.
5. Tear the fresh basil leaves over the top of the bruschetta, slice, and serve!
