THE Viral Grinder Salad Sandwich
This sandwich went viral on TikTok for good reason, it’s f’in delicious! Makes x2 sandwiches!
Ingredients
2 8” sub rolls sliced lengthwise
2 c of shredded iceberg lettuce
¼ c of mayo
1 garlic clove, crushed or minced fine
1 TBS of red wine vinegar
Oregano to taste
Salt
pepper
3-4 whole pepperocinis, sliced
1 tomato, sliced
½ white onion sliced thin
Cherry pepper hoagie spread (optional, but is it really?)
8 slices of salami, divided
8 slices of hot gabagool (capicola), divided
10 slices of pepperoni, divided
½ c of shredded mozzarella cheese, divided
½ c of shredded provolone cheese, divided
½ c of shredded parmesan cheese, divided
Preparation
1. Set the oven to broil on high.
2. In a medium bowl, add mayo, garlic, sliced pepperocinis, oregano, salt, pepper, and red wine vinegar. Whisk until well incorporated. Add lettuce on top. Wait to mix until ready to top the sandwiches.
3. Spread the cherry pepper spread on the inside of each sub bun.
4. On each of the sub rolls on one side add the salami, gabagool, and pepperoni.
5. On the other side of the rolls add the cheeses.
6. Place subs on a broiler-safe sheet pan and broil for 3-5min until cheese is melted and starting to brown. Keep an eye on it!
7. While the subs are toasting, toss the grinder salad with the dressing.
8. Remove the subs from the oven and top with sliced tomatoes, onion, and the tossed grinder salad.
9. Serve with a pickle and your favorite chips!
