The Ultimate Bagel Breakfast Sandwich
A perfectly toasted everything bagel gets a generous schmear of veggie cream cheese that melts into fluffy cheesy eggs and crispy bacon making it the ultimate way to start your day!
Ingredients
1 everything bagel, sliced in half
3 TBS salted butter, divided
2 eggs
1 slice of sharp cheddar cheese
2 slices of crispy cooked bacon
veggie or scallion cream cheese
Salt and pepper
Chives (optional)
Preparation
1. Preheat a nonstick skillet over medium heat. In a small bowl, scramble the eggs until nice and fluffy.
2. Add half the butter into the skillet and spread it around the pan. Add the sliced bagels slice down into the butter and allow the bagel to toast until golden brown and delicious. Flip to the seasoned side and allow the bagel to toast slightly. Remove the bagel from the heat.
3. Using a paper towel, wipe the pan and add the rest of the butter. Spread it around until sizzling. Add the egg to the pan. Using a spatula fold the eggs over themselves to develop a silky texture. Season the top of the eggs with salt and pepper. When the eggs are almost cooked, drape the cheese over the egg, remove the pan from heat, and cover with a lid or bowl to allow the cheese to melt.
4. While the cheese is melting, spread a generous amount of cream cheese on both sides of the bagel. Place the cooked bacon on the bottom half of the bagel. Carefully add the cheesy scrambled eggs on top of the bacon. Add the other half of the bagel so the cream cheese comes into contact with the cheesy eggs. Enjoy!
