Sopapilla Inspired Cherry Sundae
This sopapilla-inspired cherry sundae is easy to throw together by using flour tortillas AND store-bought cherry pie filling. Making it an easy low- effort dessert that you can put together for company as a sundae bar or chilling on the couch.

3 flour tortillas (fajita size)
1 TBS melted butter
¼ c granulated sugar
¼ tsp cinnamon
½ can cherry pie filling
1/8 tsp pure almond extract*
Squeeze of lemon juice (optional)
Vanilla ice cream
Whipped cream
*Ingredient note:
Be sure to check the cherry pie filling ingredient label. If the label suggests that there is almond extract already in the filling then please skip this ingredient as the almond extract is POTENT.
Preparation
1. Preheat the oven to 400 degrees. Line a baking sheet with parchment paper and set it aside.
2. In a small bowl, add cherry pie filling and add almond extract. Mix with a spoon until combined. In a medium bowl, mix sugar and cinnamon. Mix until well combined.
3. Brush melted butter on both sides of the 3 tortillas. Using a knife, cut the tortillas into 8 slices.
4. Toss tortilla slices into cinnamon sugar mixture until well coated.
5. Lay sugar cinnamon-coated tortilla slices onto the prepared baking sheet.
6. Bake for 8-10 minutes until slightly crispy. The tortillas will continue to crisp up as they cool. Allow the tortillas to cool for 5 minutes.
7. Add tortillas to a serving plate. Top with cherry pie filling, a big scoop of vanilla ice cream, whipped cream, and additional cherry on top for garnish.
