Quick 15 min Salmon Dinner

This quick 15-minute Salmon dinner is quick, delicious, and nutritious. PERFECT for those busy weeknight dinners!

Ingredients

12oz salmon cut into x2 fillets 

Favorite seasoning blend like Trader Joes Green Goddess

Salt

Pepper

2 TBS olive oil or vegetable oil

1 bunch of haricot verts or trimmed green beans

1c of cherry tomatoes, sliced in half

2 cloves of garlic, crushed

1-2 individual microwave rice


Preparation

1. Preheat a large cast iron skillet over medium heat for 3-5 minutes until hot.

2. Preheat the oven broiler on high.

3. Pat salmon dry with paper towels to remove excess moisture. Season the tops of the salmon with the seasoning blend, salt, and pepper. Drizzle the top of the salmon with a little olive oil. Do not salt the skin of the salmon at this point. We’ll do that at the end.

4. When the skillet is hot, add oil to the cast iron skillet. Add the salmon filets skin side down on one side of the pan pressing down into the skin to ensure an even distribution of heat. This will also help result in crispy skin.

5. Add green beans to the other side of the pan and season with salt and pepper toss. Cook the salmon and green beans for 3-4 minutes depending on the size of the salmon.

6. Add tomatoes to the top of the green beans and place the cast iron skillet under the broiler. Broil for 2-3 minutes. Remove the salmon from the broiler, and add the crushed garlic to the green bean tomato mixture. Toss to coat.  Place the skillet back under the broiler for 1-2 minutes. While the salmon is cooking place the rice in the microwave and cook according to the package directions.

7. Remove the salmon from the oven. Plate the salmon skin side up over the green beans and tomato mixture. Sprinkle salmon skin with Maldon salt and serve with cooked rice!
