Crockpot Salsa Verde Shredded Chicken

This is one of my go-to dinners during busy weeknights. Easy to throw together in the morning and have dinner ready when you get home. Add to tacos, burritos, nachos, enchiladas, tostadas, or burrito bowls!

Ingredients

1.5-2lbs of chicken breast (split or whole)

1tsp of salt divided

1TBS of your favorite taco seasoning divided

3/4 jar of salsa verde- I used ‘Herdez’ mild variety

[Optional] For the tacos, burritos, nachos, and burrito bowls - Rice, beans, cheese, more salsa or hot sauce, pico de gallo, pickled jalapenos, avocado, sour cream, etc.

Preparation

1. Season the bowl of the crockpot with half of the salt and half of the taco seasoning.

2. Add the chicken to the bowl of the crockpot.

3. Season the top of the chicken with the remaining salt and taco seasoning.

4. Pour in the salsa and cover the crockpot. Cook depending on how much time you have. 4 hrs on high, or 8hrs on low.

5. Remove the lid, and shred the chicken in the bowl of the crockpot so the chicken soaks up all of the cooking liquid.

6. Serve the chicken as tacos, burritos, burrito bowls, taco salad, tostadas, or nachos- it will ALL be delicious!
