Easy Pretzel Bites

These pretzel bites use store-bought pizza dough for a quick and easy way to get warm, soft pretzels fresh from the oven! Perfect for game day snacking, Oktoberfest, or no occasion at all!

Ingredients

-1 package pizza dough (I used Aldi)

-5 TBS baking soda

-6c of water

-1TBS of melted butter

-Coarse sea salt

-Beer Cheese Dip (check out my other recipes!) or mustard for serving

Preparation

1. Prepare x2 baking sheets. a. Line a baking sheet or plate that will fit in your freezer with parchment paper and set aside. b. Line a baking sheet with parchment paper for baking the pretzel bites and set them aside.

2. Open the pizza dough. Using a knife or bench scraper, cut the dough in half over and over until you end up with about 12-14 pieces.

3. Using your hands, roll the dough into balls trying to tuck the dough underneath to create a smooth-ish surface on top.

4. Add dough to a parchment-lined baking sheet and freeze for 20 min

5. Preheat the oven to 425 degrees.

6. Remove prepared dough from the freezer.

7. In a large pot add water and bring to a rolling boil.

8. Add baking soda ONE TABLESPOON AT A TIME, do not add all 5 TBS in at once. Trust me.

9. Working in batches, using a slotted spoon, slowly add  4-5 balls of dough to the boiling water and cook for 1min.

10. Carefully remove the pretzel bites from the water with a slotted spoon and place the smooth side up to the 2nd prepared baking sheet from step 1. Repeat until all of the dough has been boiled.

11. Brush the tops with melted butter.

12. (Optional) score the top of the pretzels with a knife.

13. Sprinkle with sea salt or seasoning of choice and bake in the preheated oven for 15-20 minutes until golden brown.

14. Serve warm with your favorite dipping sauce, and enjoy!

Bratwurst Beer Cheese Dip

Bratwurst Beer Cheese Dip

This bratwurst beer cheese dip pairs perfectly with my pizza dough pretzel bites!

Perfect for Oktoberfest or for watching the game.

Ingredients

1 fully cooked bratwurst diced 

1TBS salted butter

1 TBS flour

1/2c German lager beer

1/4c Milk

4 slices of American cheese, torn into pieces

1c sharp cheddar cheese, shredded

1/2tsp dijon mustard

Few dashes of Worcestershire sauce

1 recipe for soft pretzel bites

Preparation

1. In a small cast iron skillet, over medium-high heat add bratwurst and cook until browned. Remove bratwurst from the pan and add to a plate. Set aside.

2. In the same skillet turn the heat down to medium, melt the butter and add the flour. Whisk and cook for about 2 minutes. Slowly add in the beer and milk. Bring to a simmer while whisking until thickened, about 3 minutes.

3. Lower the heat and add the American cheese, whisk until combined. Add the shredded cheese a little at a time allowing the mixture to melt. Add the dijon mustard and Worcestershire sauce and whisk until incorporated.

4. Add cooked bratwurst and stir until combined. Pour into the serving dish and serve with pretzel bites.
