Grilled Poundcake with Macerated Peaches

Frozen pound cake gets brushed with butter and then grilled till warm. Then ripe macerated peaches get spooned over the warm pound cake and topped with whipped cream or ice cream for the ultimate low-effort summer dessert!

Ingredients

4 ripe yellow peaches sliced

¼ c brown sugar

¼ tsp cinnamon

Freshly grated nutmeg

¼  tsp vanilla extract

Juice from ½ a lemon

4-5 slices of frozen pound cake like Sara Lee brand (not thawed)

3 TBS salted butter, melted

Whipped cream or vanilla ice cream for serving

Preparation

  1. In a large bowl, add the peaches, sugar, cinnamon, nutmeg, lemon juice, and vanilla extract. Toss to coat. Place in the fridge for 2hrs to allow the peaches to macerate.

  • Preheat the grill or grill pan to medium-low.

  • Brush both sides of the poundcake with melted butter and place directly on the grill grates. Grill for 2 minutes on each side.

  • To the plate, add the grilled poundcake then spoon the macerated peaches over the top drizzling any leftover liquid around the plate. Top with sweetened whipped cream or vanilla ice cream!
