Focaccia Club Sandwich
This isn’t your ordinary club sandwich. This sandwich is piled high with chicken, bacon, melty sharp cheddar cheese, red leaf lettuce, kimchi, avocado, and slathered with kewpie mayo!

⅓ loaf of focaccia bread, sliced in half through the middle
1 TBS butter
6 slices of deli sliced chicken breast
2 slices of sharp cheddar cheese
4 slices of bacon
½ avocado, sliced thin
Red leaf lettuce
Kewpie mayo
Kimchi
Preparation
1. Heat a large cast iron skillet over medium heat. Add butter and move around the pan until melted. Place focaccia slice side down. Cook over medium heat until the bread is golden brown and delicious—about 3 minutes.
2. Remove focaccia and add chicken slices to the pan—top chicken with sharp cheddar cheese. Remove from heat. Place the lid or bowl over the top of the chicken and melt the cheese.
3. Assemble the rest of the sandwich while the cheese melts—spread kewpie mayo across the bread on both sides. Top the bottom side of the sandwich with lettuce. Add kimchi on top of the lettuce. Add avocado on top of the kimchi. Once the cheese is melted add the chicken/cheese on top of the avocado. Top with bacon and add the top half of the bread. Slice into halves or thirds and enjoy!
