Fluffy Biscuits
These biscuits are so FLUFFY and require no rolling pin. I know.
Ingredients
2 cups Flour
1/2 cups Salted butter, cold
1 1⁄2 tbsps Baking powder
1 tsps Sugar
1 cups Whole milk
1/8 tsps Salt
2 tbsps Salted butter, Melted
Preparation
1. Pre-heat oven to 450 degrees. Line baking sheet with parchment paper and set aside.
2. In a large bowl add dry ingredients: flour, sugar, baking powder, and salt. Whisk until combined.
3. Using a cheese grater, grate the cold butter. Add the butter to the dry mixture and mix using a pastry cutter or fork until mixture creates pea-sized crumbs.
4. Add the milk and mix until barely combined.
5. Turn the biscuit dough out onto a floured surface. Push the biscuit dough down with your hands to 1/2 an inch. Using a bench scraper cut the dough into 4 pieces and stack them on top of one another. Press the dough down into 1/2 an inch and repeat 4 more times. This creates those flaky biscuit layers we are looking to achieve.
6. Press the dough into a square about 1/2 inch thick. Using a floured biscuit cutter or glass, press into the dough to form a biscuit being sure NOT to twist.
7. Place biscuits on the prepared baking sheet leaving about 1/4 an inch between each one and repeat until dough is used.
8. Bake biscuits at 450 degrees for 12 minutes until golden brown.
9. Remove the biscuits from the oven and brush melted butter over the tops.
