Chipotle BBQ Chicken Flatbread
Game day should be easy with high flavor and this chipotle BBQ Chicken flatbread checks all the boxes. It’s spicy, sweet, cheesy, fresh, and tangy making it perfect for game day!
Please note that store bought flatbreads vary in size. The below recipe is for 2 flatbreads in a 14.1 oz pkg.
Ingredients
x1 pkg 14 oz flatbread or 1 pkg of Naan
⅔ c rotisserie chicken, shredded
2 c of sharp cheddar cheese, shredded
¾ c + 2 TBS of your favorite BBQ sauce
2-3 chipotle peppers, chopped + 1 TBS adobo sauce
4 slices of crispy cooked bacon, chopped
2 TBS fresh cilantro
Pickled red onions (see the attached stream recipe to make your own!)
Preparation
1. Preheat the oven to 425 degrees.
2. Mix ¾ c of the BBQ sauce, chipotle peppers, and adobo sauce in a small bowl until well combined. Spread the spicy BBQ sauce over the surface area of the flatbread. Sprinkle cheese over the top of the BBQ sauce.
3. Add shredded chicken and 1 TBS of BBQ sauce to the bowl the bbq sauce was mixed in. Mix chicken and extra bbq sauce until combined. Top the cheese with the shredded chicken. Sprinkle chopped bacon over the top. For a crispy crust bake flatbread directly on the oven rack for 7-9 minutes. To help with any potential overflow add a baking sheet on the rack directly below the flatbread. For a softer flatbread bake it on a baking sheet for 8-10 minutes.
4. Remove the flatbread from the oven and sprinkle the top with cilantro and pickled red onions. Slice and serve!
