Citrus Herb Dry Brine

This citrus herb dry brine combines fresh rosemary, thyme, sage, and clementine peels for an out-of-this-world flavor enhancer for your turkey!

This dry brine is enough for x1 6-7lb bone-in turkey breast. For a whole 15lb turkey please double the recipe.

For best results dry brine the turkey for at least 48 hours and up to 72 hours.

Ingredients

1 12 tbsps Kosher salt

1 12 tsps Black pepper, ground

1 12 tsps Fresh thyme, minced

1 12 tsps Fresh sage, minced

1/2 tsps Fresh rosemary, minced

1/2 tsps Smoked paprika

1 12 tsps Clementine or orange, zested

1 tsps Granulated garlic

Preparation

1. In a small bowl combine dry brine ingredients.

2. Place turkey breast in a roasting pan or aluminum pan. Carefully rub the brine seasoning underneath the turkey's skin, on top of the skin, and inside the cavity.

3. Cover the turkey breast with plastic wrap and place it in the fridge for at least 48 hours and up to 72 hours. During the last 12 hours of the process, remove the plastic wrap. This will allow the skin to dry out creating crispy skin.
