Double Cheese Chorizo Potato Smashburger
Double Cheese Chorizo Potato Smashburger- Inspired by my favorite taco! Two seasoned beef patties are smashed into Heinz yellow mustard and griddled until brown. The burger patties get topped with cheddar cheese, crispy fries, spicy chorizo, pickled onions, and a generous spread of Heinz Mayoracha on a sesame brioche bun.
The following recipe makes one monster burger.
Ingredients
5oz ground beef (80/20)
Salt
Pepper
Granulated Garlic
Granulated Onion
Mustard
2 slices of sharp cheddar cheese
Sesame seed bun
Heinz Mayoracha
Pickled onions (see attached recipe)
1/4c of chorizo, cooked till crispy
Freezer fries, a handful cooked according to package directions, keep warm in the oven until assembly.
Preparation
1. Prep the burger toppings. Cook off the chorizo in a small skillet until crispy and cook the freezer fries until crispy. Keep warm in the oven until ready to assemble.
2. Season the meat with salt, pepper, granulated garlic, and onion (measure with your heart). Mix slightly. Divide into x2 2.5 oz patties.
3. Preheat a cast iron skillet over medium-high heat.
4. In the pre-heated pan, squirt a small amount of mustard into two piles in the pan. Using a spatula smash the burger patties into the mustard.
5. Cook for 2 minutes until brown and crispy. Using a spatula, flip to the other side top both patties with cheddar cheese and allow the cheese to melt.
6. Remove from heat and assemble the burger.
7. Top each side of the bun with mayo-racha. Add the fries on the bottom bun, top with chorizo, and add the patties. Top with a generous pile of pickled red onion and add the top bun.
8. Serve with napkins. Lots of napkins!
