Pickled Red Onions
These pickled red onions will be your new favorite accompaniment to your favorite dishes. Serve these with burgers, burritos, tacos, nachos, steak, chicken, eggs, and avocado toast- the limit does not exist except for maybe ice cream. Don’t do that. 😆
Ingredients
1 medium red onion, sliced thin
3/4c apple cider vinegar
1/4c water
2 TBS sugar
1 tsp coarse salt
Preparation
1. Place sliced red onions in a tall mason jar or glass jar that can fit a lid and set aside.
2. In a medium saucepan combine, vinegar, water, sugar, and salt. Bring to a simmer and stir until sugar and salt dissolve.
3. Pour liquid over the onions and push down with a spatula or spoon to ensure the onions are covered. Onions will shrink as they marinate.
4. Cool on the counter uncovered for about 30 min. Cover and place in the fridge for up to 2 weeks.
