Tortilla Chips
A crunchy and delicious classic to serve with your favorite dips!
Ingredients
10-12 corn tortillas
1 1/2 c of vegetable oil
Salt
Tajin (optional)
Preparation
1. Slice tortillas into 6 triangles.
2. Add oil to a medium cast iron skillet over medium heat. Allow the oil to come up to about 350 degrees or until bubbles form at the bottom of a wooden spoon when stuck into the oil. You may also test with a tortilla triangle. When the triangle sizzles the oil is ready. If it browns too quickly then remove the pan from the heat and allow the oil to cool down a bit.
3. Place paper towels on top of a quarter sheet pan or plate. Working in batches, place 1 handful of tortillas into the hot oil. Using metal tongs or a spider skimmer move the tortillas around in the oil to ensure they are not overlapping.
4. Fry the tortillas until firm and are no longer pliable. About 2 minutes. Using the tongs or spider skimmer remove the tortillas from the paper towel-lined tray. Sprinkle immediately with salt and/or Tajin. Line the top of the chips with another paper towel and repeat steps 3&4 until all tortillas are fried. Serve with your favorite dips guacamole, queso, and salsa!
