Chef The Movie's Spaghetti Aglio e Olio For 1

This recipe is a scaled-down version of Roy Choi and Jon Favreau's Spaghetti Aglio e Olio from the movie ‘Chef’ AKA Scarlet's Pasta.

Ingredients

- Small handful of Spaghetti* (see tip below)

-1/4c olive oil

- 4 cloves of garlic, sliced thin

- 1/2 tsp crushed red pepper flakes

- 2 TBS fresh parsley, minced

- Squeeze of lemon (optional)

- Parmesan cheese

- Salt

- Pepper

*To measure one serving of spaghetti I like to take my index finger to the indent in the back of my thumb to make a circle. I use however much spaghetti I can fit in that space for 1 serving. If you have a better method let me know in the comments!

Preparation

Be sure to prep your ingredients ahead of time because this recipe will go by quickly!

1. Bring a large pot of generously salted water to a rolling boil and add the spaghetti.

2. Cook spaghetti for about 9-10 minutes until al dente.

3. Using a ladle, reserve about 1/2c of the pasta water. Then drain the pasta.

4. In a medium skillet, heat oil over medium heat.

5. Add garlic and stir frequently until golden brown.

6. Add the red pepper flakes, salt, and pepper.

7. Add the drained spaghetti directly into the pan and toss the spaghetti until coated with garlic pepper oil. Add a little bit of pasta water to create more of a sauce.

8. Remove pan from heat and toss in parsley and parmesan. Toss spaghetti to coat.

9. Add a squeeze of lemon if using and garnish with more parmesan.
