Green Marinade
I have used this all-purpose marinade for years both in and out of the restaurant. It can easily be adapted and tweaked for different purposes and based on what you have on hand.
Ingredients
1 bunch parsley
1 bunch rosemary
1 bunch thyme
1 head garlic
1 tsp black peppercorns
1/2 tsp chile flake
1/2 c olive oil
1 ea citrus
Preparation
1. Cut thyme into small pieces
2. Remove rosemary from thick stems
3. Peel garlic
4. Zest & juice citrus
5. Combine all ingredients in a high-speed blender and puree until homogenous
