These tostadas are fast, just a few ingredients, and absolutely delicious. The pickled onions last for 1 to 2 weeks in the fridge and are delicious on almost everything. This is also a great way to use up leftover salsa. You can add the pork (I use deli pork to make this crazy easy and fast) or add shrimp, chicken or steak - or just leave it out and make it vegetarian.
