Simple Vegan Ceviche
Ceviche is a healthy Peruvian dish that is usually served as an appetizer. If you are vegan like myself or maybe you have a shellfish allergy then this recipe is for you! Comes together quickly with a few simple ingredients and completely cruelty free.
Ingredients
Simple Vegan Ceviche:
1 (14.4 oz) can Hearts of Palm
4 Tomatoes
1 large red onion
1 bunch cilantro
5 fresh limes, squeezed
3-5 Serrano chiles w/seeds for heat
1-2 ripe avocados for topping
Sea Salt to taste
fresh tostadas, tortilla chips or saltine crackers
Preparation
Start by draining out the hearts of palm and rinsing it off in the sink. Get a mixing bowl and chop up the hearts of palm, red onion, cilantro, tomatoes, Serrano and then add in the freshly squeezed lime juice. Add sea salt or kosher salt to the mixture and then give it a mix until combined. Enjoy immediately or serve later on in the day.
This can be made ahead of time I would just suggest adding in the cilantro and lime juice once you are ready to enjoy or it can become soggy. This is a light and fresh appetizer for a get together or it can be enjoyed throughout the warmer months as a quick and light meal!
