"It's Not Ramen" Ramen

Ingredients
3 tablespoons of oil or fat (we prefer Ghee, Avocado Oil, or tonight: BACON FAT)
10 cloves of garlic, sliced
1 lb. of ground pork
Salt & Pepper, to taste
White Pepper
1 to 1.5 teaspoons of red pepper flakes (go with 1 if you're spice averse)
4 cups of chicken broth
4 cups of water
1 small onion, sliced thin with knife or mandolin
1 bunch of White Beech mushrooms
2 tablespoons of soy sauce
1 tablespoon of fish sauce
3 bunches of baby bok choy and/or a bag of spinach
1 tablespoon of ginger
2 scallions, thinly sliced
2 servings of Package of Sun Foods' Kaedama Ramen Noodles (there are two of us)
Potential add-ins are vast, but we went with mayak eggs, sesame oil, sesame seeds, cilantro (for Fran).
Preparation
1. Put oil/fat into Dutch oven and heat on medium. Meanwhile, have a separate pot of water boiling for the ramen noodles.
2. Add garlic and saute until just browning, remove with a slotted spoon
3. Add ground pork and season with a pinch of salt, pepper, white pepper, and red pepper flakes (keep in mind you'll be adding salty soy and fish sauce later, so don't overdo it).
4. Saute the pork, about 5 minutes or so
5. Add chicken broth, water, soy sauce, fish sauce, bok choy stems, mushrooms, and thinly sliced onion. Toss it all in! Cook for 5-7 minutes
6. Add bok choy leaves and/or spinach - you want them just to wilt and retain their beautiful green color.
7. Boil Sun Foods Ramen Noodles for a minute and half scoop in two separate bowls when ready.
8. Top with broth, add add-ins!
