One Great Meal: Turkey Burgers

These turkey burgers are a big hit at my house and the possibilities for turning them into more meals are almost endless. I am turning these into Turkey Kofte with Pita and Rice and Turkey Lettuce Wraps. If you want to make all 3 of these meals, double the burger mixture – form 1/3 into burger patties, 1/3 into cylindrical kofte shapes and just leave the last 1/3 to brown off for the lettuce wraps. Three fast, easy delicious dinners the whole family will love – that’s a win.

Ingredients

¼ cup mayonnaise, plus more for browning buns

½ lemon, juiced

1 tablespoon prepared horseradish

Kosher salt and freshly ground black pepper

4 burger buns

1 pound ground turkey

2 cups baby spinach, chopped

4 scallions, chopped

4 cloves garlic, minced

½ teaspoon ground cumin

2 tablespoons avocado oil

Preparation

In a small bowl, combine the mayonnaise, lemon juice and horseradish. Season, to taste, with salt and pepper and set aside.

Brush a little mayonnaise on the inside of both sides of the bun. Heat a large nonstick pan over medium low heat and add the buns, in batches, mayo side down, and cook until golden brown, about 30 seconds. Remove buns and set aside.

In a large bowl, combine the turkey, spinach, scallions, garlic and cumin. Sprinkle with salt and pepper. Form into burgers (you can either make all burgers, or reserve some of the meat to make Kofte or Turkey Lettuce Wraps.)

Place the same non-stick pan over medium high heat and add the avocado oil. When the oil shimmers, Lay the burgers into the pan and cook until well browned on the first side, 4 to 6 minutes. Flip and cook until the burgers are cooked through, another 4 to 6 minutes.

Place a piece of lettuce on the bottom half of each of the buns. Place a burger on top and then top with some of the horseradish sauce. Top with top bun and serve.

Yield: 4 servings with meat for another meal or 6 servings

Turkey Kofte with Pita and Rice

Turkey Kofte with Pita and Rice

These are made using the burger mixture from One Great Meal: Turkey Burgers, but are formed into a different shape and served with different accoutrements. They can also be formed into little meatballs and baked off if that is easier for you. You can also do this recipe with leftover cooked burgers, just warm them, break them up and serve in the pita.

Ingredients

Leftover raw meat from One Great Meal: Turkey Burgers

2 tablespoons olive oil

¼ cup tahini

1 lemon, juiced

Kosher salt and freshly ground black pepper

4 pitas

2 cups shredded lettuce

2 plum tomatoes, diced

½ small red onion, thinly sliced

Cooked rice, for serving

Preparation

Separate the meat into 4 pieces. Form each piece into a cylindrical shape that will fit across a pita once cooked. Heat a nonstick saute pan over medium high heat and add the olive oil. Heat the oil until it is shimmering and add the kofte. Cook until browned on all sides and cooked through, about 10 minutes total.

While the kofte cook, stir together the tahini and the lemon juice. Slowly add a tablespoon of warm water at a time until the mixture is smooth and pourable. Season with salt and pepper.

Divide the shredded lettuce, tomatoes and red onions between the pita. Top each one with a kofte. Drizzle with the tahini sauce. Serve with rice.

Turkey Lettuce Wraps

Turkey Lettuce Wraps

These are made using the burger mixture from One Great Meal: Turkey Burgers and you just brown off the meat with a few extra ingredients.

Ingredients

Leftover raw meat from One Great Meal: Turkey Burgers

1 tablespoon vegetable oil

1 tablespoon minced fresh ginger

¼ cup hoisin sauce

1 tablespoon low sodium soy sauce

1 tablespoon rice wine vinegar

1 head Bibb lettuce, separated into leaves

¼ cup roughly chopped cashews

Preparation

Heat the oil in a large skillet over medium-high heat. When the oil shimmers, add the leftover turkey meat and ginger and cook, breaking up with a wooden spoon, until the turkey is mostly cooked through, 5 minutes. Whisk together the hoisin, soy and rice wine vinegar. Add to the turkey mixture and bring to a simmer. Cook until the sauce has coated the meat and reduces slightly, about 3 minutes. Remove from the heat and serve in the lettuce leaves.
