Spaghetti with Cherry Tomatoes and Burrata

This is the easiest, cheesiest, most delicious summer pasta dish. It’s perfect for a special occasion or weeknight dinner, and you won’t believe how delicious and easy it is!

Ingredients

1 small red onion

2 cloves garlic

1 sprig basil

1 pint cherry tomatoes

1 tablespoon tomato paste

1/4 cup white wine

1 pound fresh spaghetti

1/4 cup grated parmesan cheese

1 ball burrata

olive oil, salt, pepper

optional: crushed red pepper

Preparation

Prepare ingredients: Get a large pot of water boiling. Rinse all produce. Halve and thinly slice onion. Smash garlic. Pick basil leaves.

Prepare Sauce: Heat 1 tablespoon olive oil in a large pan over medium heat. When oil is shimmering add onion and garlic cloves. Cook until onion is soft and translucent, about 3 minutes. Add cherry tomatoes and cook until they begin to soften and burst, about 3 minutes more.

Cook Pasta: While sauce is cooking, add a generous pinch salt to pasta water and cook pasta according to package instructions. Reserve 1 cup pasta water.

Simmer Sauce: Add tomato paste and cook until bright brick red. Add wine and let reduce by half.

Finish Pasta: Add pasta and 1/4 cup pasta water to pan with sauce and stir vigorously to combine. Add more pasta water as needed until sauce is thick and silky. Remove from heat and stir in grated parmesan. Taste and add salt as needed.

Serve Pasta: fold in basil and tear burrata over top of pasta. Dig in!
