This burger-taco mashup is a total crowd pleaser and comes together in under 30 minutes. Customize with whatever toppings you like!
1 pound ground beef
8 small flour tortillas
8 slices American cheese
1 cup shredded lettuce
2 vine ripe tomatoes, diced
2 tablespoons ketchup
2 tablespoons mayonnaise
1 tablespoon mustard
Bread and butter pickles with brine
Season beef with salt and pepper and divide evenly into 8 balls. Press each meatball into a tortilla. Set aside.
Heat a cast iron skillet until smoking hot. Place taco, meat side down in the pan. Cook until crisp on the bottom and almost cooked through. Flip and top with cheese. Continue to cook until meat is desired temperature and cheese is melted, about 2 minutes for medium rare. Repeat with remaining tacos.
While tacos are cooking, in a small bowl combine ketchup, mayonnaise, mustard, and a teaspoon of pickle brine. Set aside.
Assemble smash burger tacos by topping with special sauce, lettuce, tomato, and pickles. Enjoy hot!
