SCALLION GINGER OIL

Ingredients
1 cup scallions (more white, less green), finely chopped
1/4 cup fresh ginger, peeled and minced
1 1/2 cups neutral oil (such as vegetable or grapeseed oil)
1 tsp chili, minced
2 tbsp onion, minced
Pinch of salt N pepper to taste
1 tbsp sesame oil
Preparation
In a heat-resistant bowl, combine the cut veggies.
In a small saucepan, heat the neutral oil over medium heat until it's hot, starting to barely smoke. This helps to infuse the flavors.
Carefully pour the hot oil over the scallions and ginger mix. Be cautious as it might sizzle a bit. Add more oil if needed.
Add a pinch of salt to the mixture and give it a gentle stir. Add in your sesame oil and mix.
Let the mixture cool down to room temperature.
Once cooled, transfer the scallion ginger oil into a glass jar or bottle. You can strain out the solids if you prefer a smoother texture or leave them in for extra flavor.
Seal the jar or bottle and store it in the refrigerator. It will keep for about 1-2 weeks.
