Pasta with Sausage, Basil, and Mustard

Here's a delicious vegan recipe for Pasta with Sausage, Basil, and Mustard that serves 4 people.


8 ounces vegan sausage, sliced

12 ounces pasta (your choice of shape)

2 tablespoons olive oil

1 small onion, diced

3 cloves garlic, minced

1/2 cup vegetable broth

1 cup cherry tomatoes, halved

1/4 cup chopped fresh basil

2 tablespoons Dijon mustard

Salt and pepper to taste

Vegan parmesan cheese (optional, for garnish)


Cook the pasta according to the package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the sliced vegan sausage and cook until browned and slightly crispy. Remove the sausage from the skillet and set aside.

In the same skillet, add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant, about 5 minutes.

Add the vegetable broth to the skillet and stir to deglaze the pan, scraping up any browned bits. Let it simmer for a minute or two.

Add the halved cherry tomatoes, cooked vegan sausage, and chopped basil to the skillet. Stir well and let it cook for a couple of minutes until the tomatoes begin to soften.

Stir in the Dijon mustard and season with salt and pepper to taste. Cook for an additional minute to let the flavors meld together.

Add the cooked pasta to the skillet and toss everything together until the pasta is well coated with the sauce.

Serve the pasta in bowls or plates. Garnish with some chopped basil and vegan parmesan cheese, if desired.
