Truffle potato Waffles

These savory potato waffles are a quick and delicious way to use these tasty veggies. A great canvas for many toppings.

Ingredients

2 large baked potatoes, grated on box grater

1 small onion, grated on box grater

1 tsps salt

1 tsps black pepper

1 tbsps flax seed, blended with 3 tbsps of cold water

3 tbsps AP flour

1 cups butter, melted

1 tsps truffle oil

1/4 cups scallions, sliced

Preparation

1. Preheat the waffle iron.

2. Grate the potato and onion on a box grater, one potato on the large hole of the box grater, and one potato on the small hole of the box grater.

3. In a large bowl, combine the potatoes, onion, salt, ground black pepper, and flax mixture, and sprinkle flour until evenly mixed. Now mix in the truffle oil.

4. Brush melted butter on the hot waffle iron, then scoop about 1/2 cup of the potato mixture into the preheated waffle iron, close, and cook until golden and crisp on the outside, 5-8 minutes.

Serve the potato waffles hot, with butter, and scallion or your favorite condiment.
