VEGAN MAYO
There are plenty of delicious vegan mayos on the market these days and some not so great lol. I wanted to give you the chance to make your own with this tasty recipe.
side note: First taste might be strong, that's on purpose. Let the flavors mellow out and it becomes perfect after a couple of hours in the fridge.
Ingredients
1/2 c soy milk
1 1/2 tbsp of flaxseed meal
2 tsp organic sugar
1 tsp mustard powder
1 tsp onion powder
1/4 tsp salt
1 tbsp white wine vinegar
1 tbsp fresh lemon juice
1 c of vegetable oil
Preparation
1. In a blender, combine the soy milk, flaxseeds, sugar, mustard, vinegar, onion powder, salt, white wine vinegar, and lemon juice. Blend until smooth and frothy, about a minute.
2. Slowly pour in the vegetable oil while blending, until the mixture thickens and emulsifies.
3. Taste and adjust seasoning if needed.
4. Transfer the vegan mayo to an airtight container and refrigerate for at least 30 minutes to thicken further.
