Coconut Creamed Spinach
Creamed spinach is a simple side dish, but this recipe!!! The creaminess will make you forget you're eating spinach and turn anyone into a fan of leafy greens. The richness of the coconut and heat from the chili. Get into this recipe with me.
1 1⁄2 pounds baby spinach, chopped
2 tbsps oil, or butter
1/2 cups shallots, minced
3 clove garlic, minced
1/2 cups coconut cream
1 tsps flour
2 pinch salt
1 tsps black pepper
1/4 cups red bell pepper, chopped
2 tsps scotch bonnet, minced
1 pinch nutmeg
1. In a large saute pan over medium heat, add oil and cook shallots, garlic, chili, and red pepper until soft, 5 minutes or so.
2. Add spinach and cook until wilted slightly. Add cream and bring to a quick boil.
3. Season with salt, and pepper, sprinkle the flour evenly, and allow to combine while stirring.
4. Finish with the nutmeg, stir, and plate.
