Ingredients

1 c sushi rice

1 1/4 c water

3 tbsp rice vinegar

1 tbsp sugar

1 teaspoon salt

2 sheets of nori seaweed

1 ripe avocado, peeled and sliced

1 cucumber, peeled and sliced into thin strips

Soy sauce, wasabi, and pickled ginger for serving

Preparation

Rinse the sushi rice thoroughly in cold water until the water runs clear. Drain the rice and put it in a medium saucepan with the water. Bring to a boil, then reduce the heat to low and cover the pan. Cook for 15 minutes, or until the water is absorbed and the rice is tender.

While the rice is cooking, combine the rice vinegar, sugar, and salt in a small saucepan. Heat gently over low heat, stirring occasionally, until the sugar and salt have dissolved.

When the rice is done, transfer it to a large bowl and add the vinegar mixture. Mix gently to combine and let the rice cool to room temperature.

Lay a sheet of nori seaweed on a sushi rolling mat or a piece of plastic wrap. Wet your hands and take a handful of rice, pressing it into a thin layer on top of the nori seaweed, leaving a 1-inch border at the top edge.

Arrange slices of avocado and cucumber on top of the rice. Using the mat or plastic wrap to help you, roll the sushi tightly from the bottom up, pressing gently as you go.

Repeat with the remaining nori, rice, avocado, and cucumber. Slice each roll into 8 pieces with a sharp knife.

Serve the avocado cucumber sushi with soy sauce, wasabi, and pickled ginger on the side. Enjoy!
