Italian

1/2 cup wine vinegar or champagne vinegar

1 1/2 cups evoo

1/2 tsp sea salt

1/2 tsp sugar

1 clove garlic, finely minced

1/2 tsp fresh cracked black pepper

1 tsp Tuscany, Italian seasoning

1 tsp mustard, whole or ground

Directions

Combine all of the ingredients in a glass jar with a screw-on lid and shake vigorously for 1 minute.

Japanese

1/4 cup miso white or brown

2 tsp freshly minced ginger

2 tbsp rice wine vinegar

2 tbsp soy sauce

2 tbsp sesame oil

1 tbsp sugar

You can dilute with water, or soy sauce, as needed.

Directions

Combine all ingredients in the base of a small blender. Process on high speed for a few seconds until all ingredients are well combined. If mixing by hand, place all ingredients in a Mason jar, cover, and shake until fully emulsified.
