Coconut Rice n Peas
Hey everyone! Living in the Caribbean for so many years, this has to be one of my favorites to make and eat. Welcome to the islands man. Here’s to a delicious rice N peas dish with irie flavor.
Ingredients
1 tbsp unsalted butter
½ large onion, diced
2 garlic cloves, minced
1 c rice, uncooked
4 bay leaves
2 tsp allspice
1 tbsp thyme
1 scotch bonnet
2 heads of scallions, sliced and separated green from whites
1 tbsp ground black pepper
1 c water
1 c coconut milk
½ c cooked red beans (kidney beans or pigeon peas)
2-3 tsp salt
Preparation
1. Heat butter in a medium saucepan. Add onion and garlic, and sauté 1-2 minutes over medium heat.
2. Add beans and cook until tender 45mins or so, now add rice, bay leaves, allspice, thyme, peppers, scallion whites, water, and coconut milk. Bring the mixture to a boil, reduce the heat and simmer on low, covered, for 10-15 minutes.
3. Continue to cook, covered, until all the liquid is absorbed and the rice is tender about 8-10 minutes.
4. Fluff the rice, add scallion greens.
Taste the rice and adjust the salt and pepper if desired.
