Seared Shrimp and Soba Noodle Salad

A simple cold dish for the hot months!

Ingredients

1 lb shrimp

4 TB ponzu

1 10oz package Soba Noodles

1/8 cup thin sliced red onion

3/4 cup raw (or blanched) broccoli

1/4 cup thin sliced bell pepper

1/8 cup cilantro leaves

Ponzu

1/4 cup soy sauce

1/8 cup seasoned rice vinegar

4 1/2 tsp mirin

1/8 cup water

1/8 cup bonito flakes

3/4 tsp brown sugar

2 garlic cloves, smashed

2 lemons, juice

Preparation

For Ponzu:Put sugar and liquids together and whisk until sugar melts. Add bonito flakes, garlic and lemon juice then let sit in the fridge for 2 days. Strain solids out, then keep covered in the fridge for up to 2 weeks.

Marinade shrimp in 1 TB of ponzu at least 30 minutes. Boil noodles according to package directions, then shock in cold water. Sear, or grill shrimp until shrimp turns opaque. Squeeze out any remaining liquid from the noodles, then toss with 3 TB ponzu sauce. Add all veggies, then split into 3 servings and top with shrimp and cilantro leaves.
