Summertime Corn and Tomato Salad
Try this summer-in-a-bowl salad! It doesn’t require much cooking and it’s the perfect salad. We are focusing on sweet summer corn and tomatoes, and letting them shine
Ingredients
4 ears sweet corn-shucked
1/2-1 pint mixed cherry tomatoes, halved
1/2 red onion-diced
1 C fresh sugar snap peas-chopped
3 slices cooked crispy bacon-chopped (optional)
salt
fresh black pepper
lemon pepper ( to taste)
2 TBSP lemon juice
2 TBSP good olive oil
Preparation
Bring a pot of salted water to boil
Par boil corn for about 10 minutes, take out and let cool
Grab a large salad bowl
While corn is cooling, dice up tomatoes.
Add to large bowl, then shuck corn off cobs and add to bowl.
Add in diced onion, chopped snap peas, crumbled bacon, olive oil ,lemon juice and seasonings.
Mix well and serve! Can be made ahead of time
