Quick Weeknight Meals-Cast Iron Skillet Nachos
Get a delicious dinner on the table quick with this communal style nacho-casserole hybrid dish.
Use what you have in your fridge to set up a toppings bar and let the family go at it!
Ingredients
1 lb organic ground beef (can sub ground turkey or meat substitute)
1 packet taco seasoning
2tbsp water
1 can refried beans
1 8oz bag shredded cheese
Bag corn tortilla chips of choice
Topping options:
Diced roasted green chilis in can
Crushed black olives in can
Salsa
Sour cream
Radish slices
Avocado slices or guacamole
Raw diced onion
Preparation
Heat broiler in oven to low
In a large, lightly greased skillet set on medium, break up and brown meat, cooking almost all the way through. When almost fully cooked, add taco seasoning pack and 2 tbsp water and mix well. Turn off heat and set aside.
In a 9-10 inch cast iron skillet (or large sheet tray lined with parchment), pile in chips really high on sides, leaving a shallow “well” in the middle. Spoon in refried beans in well and gently spread out a little.
Then, add cooked ground beef on top. Top with cheese and put under broiler. Let bake for 7-10 minutes or util the beans are hot all the way through.
Take out and serve hot!
Either add your choice of toppings on top of hot nachos or set the toppings out communal style and let everyone serve themselves.
***NOTE*** if using a sheet tray, lay everything flat and spoon pre heated beans on, then layer with meat and cheese
