Meal Planning-Tomato Confit
This delicious meal planning hack will save you time and inspire you to use it in so many different ways.

1 lb cherry tomatoes
10 cloves peeled garlic
1 C extra virgin olive oil
1 bunch fresh basil
Using a heavy bottomed skillet or pan, turn pan onto a low heat.
Pour in your tomatoes and then add garlic cloves and olive oil.
Stir gently and let that simmer on low for 15 minutes. Add basil bunch and salt, mix again, and continue to simmer on low heat for about 20 more minutes or until tomatoes are burst open.
Now, transfer to a ceramic dish and let cool. One cooled, store in fridge.
