Tuna Salad with Collard Green Wrap

Ingredient Spotlight is on the collard green!

Collard leaves make great wraps, they are mild in flavor, and sooooo nutritious.

I’m going to show y’all my tuna salad made with dill pickles and capers, and we are going to wrap it in collard green leaves. Great lunch idea!

Ingredients

1-2 cans or jars of good albacore Tuna fillets in water or oil (can substitute chicken)

Collard green leaves: de-stemmed, washed well and patted completely dry

1/2 of a white or red onion-diced

1/2 C mayo

1/4 C sour cream (can substitute plain greek yogurt)

flat leaf parsley-chopped

chives-chopped

1/2 tbsp capers-diced

3/4 tbsp dill relish

lemon zest-to taste

fresh cracked pepper

Old bay

Onion Powder

salt

paprika

Preparation

Make sure your collard greens have the big part of the stem removed, and that they are completely dry. Lay them flat.

In a large bowl, mix together all the ingredients.

Using a flat spoon or spatula, spoon tuna salad onto one side of the collard leaf and roll up tightly. Cut in half and serve
