Ingredients
SHRIMP:
1 lb deveined shrimp
Flour
Panko Bread Crumbs
Buttermilk
Creole seasoning
Old Bay
Onion Powder
Canola Oil
TARTAR SAUCE:
1/2 C mayo
1/4 C sour cream
2 tbsp finely diced shallot
2 tbsp chopped fresh dill
2 tbsp chopped chives
2 tbsp lemon juice
2tbsp savory dill relish or chopped cornichons
1 tbsp chopped capers
1 tbsp dijon mustard
salt and fresh ground black pepper
Preparation
Heat oil to 350-375
First, quick-marinate shrimp: place deveined and shelled shrimp in foil pan and cover with buttermilk, creole seasoning, onion powder and Old Bay. Mix together and set aside.
For tartar sauce, grab a bowl and mix all ingredients together. Place in fridge.
Now, set up your frying station, making another foil pan of your dry ingredients: flour and panko. Mix well and set next to marinating shrimp.
Have a wire sheet lined tray or paper towel lined tray ready to put shrimp on as they come out of oil.
Gently dredge shrimp through the dry mixture, taking time to cover and then fry in small batches, about 1.5 minutes on each side, 3-4 minutes total until very golden brown
Place on wire rack and immediately season with salt.
Serve hot with tartar sauce!
