Capri is teaming up with Lewis West, the powerhouse behind London-based West Bakes Cookies to make a key lime cookie pie.

In this behind the scenes demo, Capri and Lewis show you what went in to making the cookie pie they presented at Foodies Festival London.

West Bakes famous cookie dough is the base for the pie “crust” which is perfectly balanced by the sweet and tart key lime filing.

Of course, because no event with Capri is complete without a side of history, she will share some of the folklore behind the origins of key lime pie!
