Around The World in 80 Pies: Sarah's Trinidadian Macaroni Pie
This traditional Trinidadian dish is a unique expression of pie.
Trinidadian influencer and model, Sarah Hamel-Smith shared her version of Trinidadian Macaroni Pie with Capri as part of the Around The World in 80 Pies series.
Ingredients
1 lb sharp or extra sharp cheddar cheese, shredded**
1 lb mozzarella or any other cheese shredded
2 ½ cups evaporated milk (or heavy cream)
2 eggs, whisked (optional)
1/4 cup chopped scallions
2 teaspoons granulated garlic
1/2-3/4 head garlic minced
2 teaspoons onion powder
1 small onion, minced
2 tablespoons ketchup, optional (but I highly recommend!)
2 teaspoons yellow mustard
½ teaspoon freshly ground black pepper
1 tablespoon salt (for boiling pasta)
Pinch brown sugar
2 dashes Trinidadian pepper sauce or hot sauce of your choice 2
Fresh Pimento Peppers, chopped, optional can also use 2 tablespoons chopped red bell peppers instead
2 tsp green seasoning, optional
Panko breadcrumbs, optional
Preparation
Preheat oven to 350 degrees
Boil water for macaroni and cook for 8 minutes or until al dente
Combine milk, cheese, peppers, garlic and spices
Drain macaroni
Coat macaroni in cheese sauce mixture
Place coated macaroni in oven safe dish
Top with cheese
Bake for 35 minutes
